Recipe Inspiration: Valentine's Day

VALENTINE’S DAY DINNER FOR TWO
  

Ingredients:

  • Ribeye steak

  • Marble Potatoes

  • Brussel Sprouts

  • 1 bunch fresh thyme

  • 1/2C Olive Oil

  • 1/4C unsalted Butter

  • Kosher Salt (optional)

  • Fresh ground pepper (optional)

Preheat oven to 350D.  Remove prime rib from refrigeration and allow to come to room temperature while you’re prepping the remainder of your meal.  

Vegetables: Wash all the brussel sprouts and using a towel, pat dry. Repeat this process with the marble potatoes.  Using a sharp paring knife, cut the end of the brussel sprouts and peel any outer layer that may not be apeeling. If the brussel sprouts are larger than one can consume, cut them in half.  Once cleaned and cut, pour 4T of olive oil over the brussel sprouts and season to taste with kosher salt and black pepper. Pour the contents of the bowl onto a baking tray lined with wax paper and set aside.

In a clean bowl melt 1/8T of unsalted butter along with 4T of olive oil and 4 sprigs of thyme.  Toss the clean marble potatoes in with the hot butter and oil mixture, season with salt and black pepper and lay over a baking tray lined with wax paper.  

Place both the brussel sprouts and the marble potatoes in the preheated oven and roast for approximately 20-25 minutes or until tender and golden brown. Cover with foil to remain hot while your steak is cooking.

Steak:  Season the Prime Rib with Kosher salt.  In a skillet, heat 4T olive oil and the remaining butter along with 4 sprigs of thyme.  Once hot, remove the thyme and add the seasoned beef, place the thyme back atop of the steak and sear on each side for 2 minutes each.  Remove the steak from the stove top and finish in the oven for 3-5 minutes or until the internal temperature reaches 150D. Remove and let stand for 3-5 minutes before enjoying.  Use the pan drippings as a natural jus for your steak.
