Guest Blog: Shanti Pappas of Happy Belly Health - Too Busy To Eat Well?

Spicy Green Beans

“I’m too busy”, “I get home too late”, “I’m too tired”, “the kids won’t eat it”…. I’m sure I’ve forgotten some of the other reasons people end up eating unhealthy take-out, or just unhealthfully in general.
Here’s the thing: If you had a personal chef who’d have your delicious dinner waiting for you when you arrived at home, chances are you’d benefit in tons of ways!

      1. You’d enjoy your food… perhaps even savor it!
      2. You would eat dinner earlier and have more time to digest and unwind properly before bed.
      3. Your time would be freed up to enjoy your family, start a hobby, or take a bath and relax.
      4. You’d probably have an easier time losing weight because you’d be able to enjoy more vegetables and lighter dinners that are actually satisfying… which also means you’d be much less likely to cave to comfort foods because… well, there’s simply less stress.

HBH TIP: Delegate what consumes your time, what you don’t enjoy, and what someone else can do better

If you have it in your budget, by all means, hire a chef! (I have a few good ones I’d recommend, so ask me!)
However, for those of us who don’t have the budget for it, I would suggest finding a grocery and meal delivery service that you can trust has your back with good healthy options of nutrient-dense, high quality foods. (And yes, the combo of the two is possible and ultimately the best option.)

My friends at Luke’s Local do just that. I’ve met with the chefs and the buyers to help put together Happy Belly Health-approved meals and grocery items that will keep you progressing on your health journey. Plus, their food is delicious!
Every week they share mouth watering menu items you can easily order and purchase using their app and have it delivered within hours directly to you. And if you also need some seasonal fruit, your favorite nut butter, or a dozen eggs, you can order those, as well.

This week, I’m especially excited about the vegetable sides. We’ve been cooking outside more, and the sides always get neglected. It’s so nice to order some you know will be tasty and work well with BBQ anything. Try their spicy green beans marinated in a Calabrian chili oil, champagne vinegar, and olive oil. Or their yams - I love yams, and theirs are super sweet mini garnets, roasted and seasoned perfectly. The spanish paprika with simple salt and pepper round out the flavor perfectly. It’s nice to order plenty for left overs, as well.

The point is, don’t neglect what’s important to you and your family, good health. And get help when you need it.

"I love making a big batch of caponata in the summer to have in my fridge all week. It’s great with pretty much anything- meat, fish, toast, fried eggs, cheese- it’s just delish! This recipe makes things a bit easier by roasted the eggplant and folding it in at the end. Traditionally, pine nuts are mixed in but I like garnishing with almonds since we live in the almond mecca and this way they add nice crunch to the dish. Caponata is better made at least a day in advance as well to allow the flavors to meld together. Even people who are weary of eggplant won’t be able to resist the sweet, tart and rich flavor of this caponata!"
